As a mom this is one of my favourites, Sunday breakfasts are huge around here. These pancakes are always a hit, Keto and Kid approved! With a wide range of toppings available, you can indulge without the guilt. Pro tip: Can also be used for wraps or adding in to your other favourite recipes.
The Perfect Keto Pancake Recipe, just a few ingredients and about 30 minutes of your day and you will have the perfect stack of low carb, keto pancakes.
Heres What you will need:
• Large eggs – 2
• Cream cheese, softened – 2 oz
• Coconut flour – 1 tablespoon
• Baking powder – 1/2 teaspoon
• Vanilla extract – 1/2 teaspoon
• Low-carb sweetener (optional) – 1-2 teaspoons
• Butter or coconut oil for cooking
How to prepare:
1. Whisk or blend eggs, softened cream cheese, coconut flour, baking powder, vanilla extract, and sweetener (if using). Blend until smooth and well combined.
2. Let the batter sit for a few minutes to allow the coconut flour to absorb some of the moisture.
3. Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or coconut oil.
4. Pour about 1/4 cup of batter onto the skillet for each pancake.
5. Cook until bubbles form on the surface of the pancake and the edges start to look set, then flip and cook for another 1-2 minutes, until golden brown on both sides.
6. Repeat with the remaining batter, adding more butter or oil to the skillet as needed. Makes approximately 4-6 pancakes.
